Dried Slim Jimmys

    Well sorta semi dry using cure #1 and TSM mix.

    For 5 lbs of 80/20 GB sticks heading to Afghnistan

    6 Tb of the SM mix
    1 cup distilled water
    1 t cure 1

    Mix together and let marry up. Get the smoker pre heated to 130 and ready to mix, stuff, smoke.

    Looking good.  Have you used that seasoning before?  How is it??
     
  6. Looks Great!! I need to do some kind of Mod on my smoker to get and keep the temp lower so I can do snack sticks etc

    I have a PID to control my Bradley.

    And i installed a fan at the rear to control the high and low temp spots inside the cabinet. This also circulates the smoke from the AMZNPS.

    AMZNPS filled with AMZN Blend pellets ready to go.

    In my Bradley 6 rack.

    I added a pan of hot water to the lower rack. This will help keep the casings from getting to dry.

    NIce! :Looks-Great:

    But, Goodmark Foods and Lon Adams might object to your using that name! (Lon's son is married to my niece. Lon invented the recipe and process that is used to make the famous smoked sausages.)
