Wife had gotten two hams not long ago and decided it was time to double smoke them, ala Bearcarver (RIP) method. Not so much to eat right away but more so to break down into smaller pieces. Had to get out the bathroom scale to weigh them as none of my other scales could handle the weight... 18 and 19 lbs.

Before trimming...

Trimmed them up and put all the trimmings and fat in disposable trays with holes in bottom to baste as they cook. For the most part smoker ran at 235 degrees.

Little pause in timing, 1st ham was put in 1 1/2 hours before the 2nd.

This is where my big commercial fridge comes in handy... lots of space without having to babysit it.

We will have plenty of great meals out of this... share some with ours kids as well!
We had a Christmas to go to today with inclement weather, my wife didn't want to leave the house but her mom made prime rib... we had to go! It wasn't that bad, unless you ask my wife lol! We could see the navigational ditches and high line poles.

Well, not bad for northerners!

Forgot to add one of our gifts, thought these were so cool!

Hot pads for putting hot pots/pans on.

Hope you all had a Merry Christmas and wish you all a happy New Year!

Those look great Ryan and gonna be some good eats!
I saw those hot pads somewhere advertised and thought they were a great idea.
Umm...no driving in THAT weather.

We shut down at the threat of the white powder down here. 😆

Thanks Keith! Just think, Saturday when I smoked the hams it was 48 degrees. Sunday, on our way home from her mom's was 8... with strong winds, didn't look to see what windchill was... cold!

Looks amazing Brokenhandle Brokenhandle never seen that brand around here. I got one at Fareway Store this year for Thanksgiving and it was a Webster City Custom Meats brand, apparently Fareway owns them now, it was good.
When you grow up with these types of winters, driving like this is nothing out of the ordinary. High line poles are key! 👍
Hope you had a Merry Christmas and have a Happy New Year!

Thanks Carl, I appreciate it! We bought these locally, I believe they come through Lynch, a local hog buying station/company. Really good!
Love Fareway!

Looks great to me and will provide a lot of tasty meals!

The wife and I both agree that the best part of double smoked ham is -
the double-smoked ham-salad that comes later
Thank you! I'll admit, hams are one of my favorite things to smoke and eat!

Man those are some good looking hams Ryan. Lots of good eats coming your way. We're battling freezing rain now. Mother nature just can't make up her mind this year.

Point for sure

Thanks Chris! Yes, mother nature sure has an odd sense of humor! I'll take the cold and snow, at least I can move the snow!
