Wife had gotten two hams not long ago and decided it was time to double smoke them, ala Bearcarver (RIP) method. Not so much to eat right away but more so to break down into smaller pieces. Had to get out the bathroom scale to weigh them as none of my other scales could handle the weight... 18 and 19 lbs.

Trimmed them up and put all the trimmings and fat in disposable trays with holes in bottom to baste as they cook. For the most part smoker ran at 235 degrees.

Little pause in timing, 1st ham was put in 1 1/2 hours before the 2nd.

We will have plenty of great meals out of this... share some with ours kids as well!
We had a Christmas to go to today with inclement weather, my wife didn't want to leave the house but her mom made prime rib... we had to go! It wasn't that bad, unless you ask my wife lol! We could see the navigational ditches and high line poles.

Thanks! We love ham! Saw some other ideas on another ham thread... might be some ham sliders in our future... among other things!
