Wife had gotten two hams not long ago and decided it was time to double smoke them, ala Bearcarver (RIP) method. Not so much to eat right away but more so to break down into smaller pieces. Had to get out the bathroom scale to weigh them as none of my other scales could handle the weight... 18 and 19 lbs.
Before trimming...
Trimmed them up and put all the trimmings and fat in disposable trays with holes in bottom to baste as they cook. For the most part smoker ran at 235 degrees.
Little pause in timing, 1st ham was put in 1 1/2 hours before the 2nd.
Trays of trimmings
Looking tasty
This is where my big commercial fridge comes in handy... lots of space without having to babysit it.
Pulled the 1st one to glaze
Pure deliciousness
It started getting late as I got a late start but got a finished pics of them
The recipe for basting
We will have plenty of great meals out of this... share some with ours kids as well!
We had a Christmas to go to today with inclement weather, my wife didn't want to leave the house but her mom made prime rib... we had to go! It wasn't that bad, unless you ask my wife lol! We could see the navigational ditches and high line poles.
Well, not bad for northerners!
Forgot to add one of our gifts, thought these were so cool!
Hot pads for putting hot pots/pans on.
Hope you all had a Merry Christmas and wish you all a happy New Year!
