Hello from MN, I'm kinda new to the smokin thing. I thought if I was going to learn how to smoke, I figured I might as well do it the old fashioned way.
 
Welcome from SC. It's good to have you here on this great site. There are a lot of fine folks here who are always eager to share their ideas, recipes and tips. All you have to do is ask away and keep reading. There are always new trends coming along, but there's nothing better than old school.

I built that's in my profile picture and it works fairly well. Just have a few questions about getting meat up to temp. My smoker get up as high as 225f if I push it. Is it better to do low and slow and finish in the oven or just wait it out? Question 2: is their any benefit to using charcoal and wood of just one or the other? Thanks!
