Smoked with oak wood low and slow. Some of it took right at 8 hours, the roast had tons of fat so I’m sure would have came out great smoking it whole

I’m glad you guys like it thanks for the compliments. I used some of Fred Meyers seasonings and it came out great. To bad they have discontinued them out started selling them In small containers. I need to come up with my own soon so!! This is what i used and I got the last of it. Was actually on sale for 1/4 of the price. Was at the sale by date. I used to use another that was really good. I’ll use about 3/4 of one of these to 50 pounds of pepperoni.

This grinder can be hard to keep up with. It’s a # 32 1.5 hp. I add decent amount of other ingredients then meat so I’m reaching grabbing meat then other things to put in the hopper. And it’s a real rush doing it. Thinking of Fabing up a little stainless shoot over the top to just slid stuff in right over the top of it
