De-boned Butt is ODDLY shaped and now in several pieces!!! How do I smoke it?!

Ok, only because they are turning out nicely, I snapped a pic of what's in the smoker! No laughing at my wide, lumpy butt!!!

Tonight I am trying to resist the urge to pull my butt out of the pit prior to reaching pulling temp or wrapping to reaching pulling temp! Best way to push past the "stall"? Should I just give in and wrap? Or wait it out?

Some organic store here in Charlotte, I found the raw agave there, as well! We like the agave for the "sweet" factor - a great alternative to honey, which I do not like.

Funny, isn't the agave plant used to make tequila? Hmmm....
I have found honey, agave and other types of granules at some Asian Markets in Orlando....

They look awesome!   The big guy will be proud!  

I've deboned venison  hams before.  You  just tie the back together like nothing ever happened.

It's your call...I wouldn't wrap because I am a bark nut...check with the big guy - does he want bark or not?

Ok, so the smaller pieces where just a touch dry, but The Big Guy commented that it was still pretty darn awesome. The bark was beautiful! I would have gotten pics of the super great darker meat/bigger pieces but we were way too busy eating and pulling! You know, checking for flavor and whatnot!!!
 
That looks Great Alicia!!! And you were all worried this morning and now your are happy and satisfied!!! Great job!!!

Sounds like some Amazen Q-Matz are in your future, no more sticking to the rack!

I agree on the Q-matz! But not because my butt stuck to the rack (the little kid giggles, the old lady part of me just jiggles, but I still smile when I talk about my butt!) -- I let these go until they hit pulling temp; when I went to pull them out of the smoker they just pulled apart!!! It was a truly beautiful sight and sound!!

Did you use a finishing sauce?  That usually resolves any minor and spotty drying out.
