Brined and smoked a venison hind end. Different muscle groups cooked at different times. I knew I should of pulled it a little earlier, but being brined I let it go. Still ended up being pretty good! I have plans of doing a "beef n broccoli " leftover meal with it if time and ingredients work out!. Love natural protein!
