I have a frozen Tri-tip. I normally do the sink full of water to thaw everything. It only me eating and hate to cook the whole thing. Guess I can cut in half and re-freezer other half?
 
I would do that. Another option you can Cooke the whole thing and freeze what you don’t eat. Heat up with a SV if you have one
Like this approach better. Never was a fan of re-freezing meat.
 
This is brisket . Smoked whole , vac'd and reheated from frozen with SV'd .
No loss in quality , but I've been cross cutting them raw . Smoke half and save half .
I have no issue with refreezing , but try to portion it out before the first freezing .

Thanks Rich. Albertson has Tri-tip for $5 lb today. Might pickup one and cut in half before freezing this time.
 
I am in agreement with those who said cook the whole thing and reheat.

Oh man $5/lb is stock up. Haven’t seen it that low in about 5 years. Usually 11.99/lb cheapest I can find.

I’d cook it whole then cut what you want and freeze the rest. Smoked meats reheat very well, plus with SV it’s a quick easy meal.

The $5 sale was today. They did not look that great.

This the one I got. Just going to slice up small end for Pho meat as I am out. Plan to grill tomorrow. Guess season tonight and thinking indirect on my barrel grill until 125 than sear?
