Why? Because I seen pops do it and looks great

I am using my Briner Jr for the first time.



Mixed up a batch of pops low salt brine.



Bird in.



Plate in and top on.





Gonna cure til Thursday I think.

I've done a turkey and I believe a chicken or two in Pops brine. Yes, the dark meat will have a "hammy" texture. It still tastes like chicken, it's just different. I happen to really like it. The white meat gets less "hammy", really just stays incredibly moist with a slightly firmer texture. Sort of like deli chicken.

That brine bucket thing is AWESOME!!! I need one!! Also I am intrigued by by your rotisserie set-up in what looks like a drum smoker!! How did you do that?

I like a lil'cure in a chicken. While digging in the freezer for ice cream this week (Did ya see the news about Sid Bass and Blue Bell???), I found 4 Turkey drumsticks just laying their waiting to be smoked........
