How much #1 pink cure per pound of pork butt for smoke sausage ?

If you are using Prague #1 then the rate is 4 oz. per 100 lbs of meat. This should be stated on the package.....

That works out to 1 oz per 25 lbs.

There is 1/2 oz. per level Tablespoon....so 1 tablespoon is good for 12.5 lbs.

There are 3 teaspoons per tablespoon..so 1 teaspoon is good for approx. 4 lbs.

That works out to be 1/4 teaspoon (level) per 1 lb.
