Thanks everyone! My wife and I braved thunderstorms and paddled out into the lake today. The results were electrifying! Translation, everyone else went home and we had the lake to ourselves!

Thanks Ak! I ditched the skin. It wasn't up to par. I think from now on I will do this recipe with skinless birds.
If you leave the skin on, make sure you get the rub under the skin.  You can always take the skin off and throw on a hot grill to crisp up and eat as a little side treat!

There's no rub for this chicken cook. It's all marinade.

Thanks Gary! The roadside marinade is good stuff. So good my ex-vegetarian wife wants me to cook it at least once a week!
 
Chopped up the remaining few pieces that were left. Mixed with a bit of mayo and chopped celery, put it in a pita pocket. Yum!!!
