Been doing my normal full batch mix , 350 grams water , 500 grams flour , then splitting it in half and doing two loaves .

Mix in a stand mixer , then into the fridge overnight . Next morning I'll do some folding , then divide and into the baskets . Let it on the counter while the oven heats up . 25 minutes covered at 450 , then lid off until I like the color and sounds hollow when tapped on the bottom .
Comes out great . Smellin good in here ,,

Thanks for the comments . I have 2 more to do tomorrow . Been using a dough conditioner in the last few . Really brings the flavor to the crust .

The only thing that smells better than bread baking is bacon frying.
Yeah , if you fried a skillet of bacon while the bread was baking ,,,,

Here's the cut shot . It's perfect . I think I got the dough conditioner going the right direction .

My son did legs and thighs in his dutch oven , with a peppercorn cream sauce .
He knows his flavor profiles and sauces .

Beautiful! What kind of proofing basket do you use? We have one that looks sort of like a coiled rope basket, but never been successful with it, or I lack an understanding of how to use it.

Do you use the cloth liner with yours ? It should have one .
I've been doing yeast bread for a lot of years , but I learned all the sourdough stuff from Rick .
This is thye " stuff " I use . The baskets ( on the left ) are made by Bulka .
They are wood pulp , and don't have to have a liner . White rice flour in them
to keep the dough from sticking .

Added the long bread oven last year .

What trouble are you having ?

Jealous of those excellent loaves
I forgot my SD back north and I finally figured out why the new starter has been stubborn.
Water filter is not getting out all the chlorine.

Sticking has been my continual issue but in hindsight I've been AP flouring the baskets, I'll give rice flour a go. Appreciate it!

Rice flour for the baskets only . Use AP or bread for the stretching and folding .
If you get the rice flour on your dough , it won't stick to itself .
Liner in the basket , dust with rice flour and dump the exess . Dough in bottom side up .
