Smoked up a rack of country style (Texas Style) ribs.

Put them in the MES for4 hours at 240F

I had a challenge with wind pulling the air out and thus unit was having trouble getting above 230F. i finally closed the vent and temp got back under control. Internal temp got to 172F. A little hotter would have made them a bit more tender but yummy overall. Went with our favourite whiskey bbq sauce with chipotle chili added. Baked a potato each and sadly had left over bacon from breakfast so had to sacrifice.

Not bad for a northern guy even north of the border. :D
