I didn't have to dry them---Just habit from drying many things before Rubbing or after curing, but I did put these in the fridge awhile before marinating, because I didn't want too much time in the marinade.

The only thing I would change if I do it again would be to drop the Toasted Sesame Oil from 3 TBS to 2 TBS.
