Seeing this posted the other day,wife & I agreed it will be our Thanksgiving Dinner
Used one package of Pork Tenderloins
1/4 lb.Prosciutto
1/4 lb. UMAi Soppressata
1/4 Provolone
Olive Salad chopped with garlic
All wrapped in Bacon
Tenderloin
Butterflied and pounded
UMAi Soppressata
Loaded it up
Badly wrapped in Bacon
Used my Kettle W/KBB & orange chunk
Smoked at 225 for 2 hrs then jacked the heat up to 350
only took 10 minutes to get the bacon Crisp
Rested then sliced final temp was 147* F
Served with a Sweet Potato
What to do with the extra Sweet Potatoes
