Cooking with BEER?

Does anybody cook with beer? If so, what kinds of meat do you put it on and what kind of beer? I know beer brauts are popular, but I'm looking for something else.

I was told in the past that Old Milwaukee adds good flavor. Would you marinate it or spray to the meat?

Beer recipes anyone?

I have mopped ribs with yeungling beer from a spray bottle and put a little in the foil when I wrap them.

I have an incredibly hard time Milwaukee's beast makes anything taste good. But I'm a bit of a beer snob. That said, i stay away from really happy beer when cooking most things. A good dark or black beer is a great addition to nearly any stew or meaty soup. Also I have found if you simply DRINK 6-8 beers, most any food will taste amazing! Ha!

Just looking to see how people use beer when grilling meats like steak, pork, lamb or chicken

I use a little beer to coerce the neighbors into coming over for some "Q".  Lay them out like bread crumbs.  When doing ribs, I add a little to the bottom of the pan to prevent drying.  Whatever is at hand, nothing special.

I do agree that ingesting the beer is probably better than injecting it in the meat.

i tend to use beer,wine, spirits in most of my recipes. for main course,side or sauces. as a rule never cook with something you don't drink. and i mean drink for taste not get drunk.

as for beer, i look for it to impart flavor. i will use a good IPA or Guinness most of the time. for instance:

Guinness saute onions go great on a brat. sweet onion + brown sugar and bottle of Guinness . simmer for a few hours while your cooking.

now now now....never underestimate the call of the beast!!! hahaha. i always use cheapo beer for cooking..never a good one..i know fer' sure im not using a craft beer for a drunken chicken or a marinade for flank steaks..its gunna be natty lights,beasts, or keystones...always. lol.

Seriously, you have never made beer can chicken before? You gotta try it.

Also, I will pour one in the drip pan when I do a brisket or roast. It adds a nice, subtle flavor.

ill throw a keystone, with a little crAwfish boil in there for my birds. tayyyy-stteeeeee!!! lol.

I cook with beer all the time. I use it in recipes that call for red wines quite often as a substitute. Typically for rich flavored dishes I will use a good porter or IPA. For just boiling brats, crawfish etc I use cheap beer (keystone, pbr, etc). I really like to make stews in the winter and using a good stout or smokey porter can really elevate the flavor. For my injected wings I mix 2 parts Franks with 1 part cheap beer then inject. A good marinade for steak is one porter mixed with coffee grounds.
