Can you use the “dry aging collagen film” to age in a regular fridge? Much less expensive than the Umai. I’ve seen comments that you can and comments that you can’t. What says the knowledge here?

I’m mostly referring to sausages.

As far as I know ( and I’m no expert on curing). If your going to use the collagen sheets, you need to be in a dry curing chamber with controlled temps & humidity. With the Umai, you just need a regular fridge. I’m sure some of the sausage guru’s will see this and respond.

Nice... I can't say that I have ever had it. but it sounds awesome!
Middle eastern. My mother (syrian) used to make basturma and eggs for breakfast was a childhood fave. I have the ingredients and the two guys recipe...it's on the shortlist and I will save some for you Keith.

I have not used these for sausage, but I have dry aged a picnic ham in the fridge with them. Works perfect.
 
Good news. Eric over at Two Guys and a Cooler says he is currently testing this and will be posting a video about it.

I use a Dry Age Bag from Artisan Meat LAB which is made of the same material as Umai but the price is almost twice as cheap :)

For those who don't want to pay just for the name, this is a great alternative. I haven't noticed any differences apart from the vacuum assist strip. Umai has a white strip, while Artisan Meat LAB has a yellow strip of a completely different material. The Artisan Meat LAB instructions are much more detailed and the packaging looks very luxurious.

I hope you guys will find my discovery equally useful :)
