I bought a small boneless chuck roast cross rib steak because it was a good price. I can't find any recipes online for one of these. Not sure how long or what temp I should smoke it at. It's only just over 1 pound and about 1" thick. Just right for two but I don't want tough meat which is what I usually get when I try to smoke beef. Any suggestions?
 
I would salt, pepper some garlic smoke at 250-275 until internal temp hits about 180-185, let it rest for 10-15 minutes and enjoy. Chuck is usually not good rare.
 
I've never seen or heard of the cut, but these 2 sites say to cook it like a steak....

Edit: And this one says to sear then braise? I dunno.
