Well I may have figured out my new Akorn. While cleaning out the ashes I found a gap in the bottom gasket. I had some leftover felt seal I used on my offset so I put the felt all the way around the bottom drum. I've been able to control the temps now.
Thanks to all for the help.
This bird was brined for 14 hours then layed in front of a fan for 1 hour. Oh, there are 2 breasts there as well.

Pretty good Al. Thanks for asking. The skin was a lot better than my last one as I ran the temp closer to 290. I used Royal Oak Lump and a few small chunks of hickory. I went small on the volcano build so it would over run. I'll grow it as I learn to control it better.
