Hello all:
I just bought some new cherry rub and thought I would try to make some cherry flavored baby backs here is how it went...

I applied the cherry rub and let sit in the fridge overnight

I put on the smoker at about 300 degrees for 2:15

i spritzed with juice and vinegar mix every half hour to keep the ends moist

keep my fire going with red oak logs

wrapped for 45 minutes with vinegar juice mix and parkay margarine

brushed with a cherry cola sauce

back on the smoker to set the sauce...

money shot! fell right off the bone made them hard to slice!

I usually like them not so FOTB but these are outstanding and the cherry flavoring comes through but not enough to overpower the meat and smoke!


cherry cola sauce
1c ketchup
3/4c cherry cola
1 tbs cherry rub
3 TBS red wine vinegar
2 tbs butter
1/4c T. sugar

i used cherry Pepsi on this one but coke zero cherry would work!

They Look Great ! Love those Red Oak Logs. Must Taste Phenomenal.
 
They look amazing. Nice job and love the color. Never used cherry rub however, I have been smoking pork with wild black cherry sticks for years. My favorite pork smoking wood. I'm lucky that there are plenty in my woods behind the house. Needs to be really seasoned and dry. Nice mild aroma and flavor.
