Went to Pulaski yesterday to check out the salmon run.

Went to the cheese store, looking for extra sharp white cheddar.

They had some 21 year xxxx....

Had to buy a sample.

Expensive. Trying it tonight.

I'd had to try it too, price be damned.

I bet it's wonderful, sharper than a Sushi chef's knife, smooth but with fine crystallization throughout and slamming with flavor.

I bought 25 yo cheddar from River rat cheeses upstate NY, interesting to say the least.

I go there often. It is rare when they have any cheese aged over 5 years. You can get 8 oz of 20 year cheese from River Rat for 20.00. It's on sale from 25.00
