Hey guys, i have a verticle barrell type of charcoal smoker that ive been learning on.  My charcoal was ready to go and i put some wood on the charcoal real quick and then i put the food on.  It started smoking that thick white smoke i dont want.  Do i put the wood in the charcoal with the charcoal while its warming up or once its already to go?  Also, once the smoker is going and i need more wood in the smoker, when i put more wood in with the charcoal, it starts getting more thick white smoker. how can i prevent this?

Mix the wood in with the charcoal at the beginning.

Fill the charcoal basket up with a mix of charcoal & wood chunks.

Then light 15 or so briquettes & put them in the middle of the unlit charcoal.

It's called the minnion method.

Hope this helps!

I do the same as Al mentioned above - The minion method gives a good quantity of smoke over a long period of time

Good quality briquettes will give you long controlled burn and you can use a combination of wood and/or pellets for the flavour.

When using wood you will always get some fairly thick white smoke to begin with as the wood catches. This is not a problem and it should soon subside to a thinner white smoke reasonably quickly. The thin blue smoke that you are alluding to though is often almost invisible and is sometimes mistaken for no smoke - causing more wood to be added with more thick white smoke produced.

Using the minion methods above, not all of the wood catches at once (as it would have done in yours) and it therefore gives you thinner sustained smoke over a longer period of time.
