Carolina smoker in Texas

  1. I've lived in Richmond, TX for 23 years but I bar-b-qute like my Dad taught me in South Carolina. Vinegar and mustard sauces with no sugar. I do ribs dry and use very little rub. My equipment is a 40" MasterBuilt electric smoker and a Weber Genesis natural gas grill. I focus on pig but will do a beef brisket now and then.
