Z zippy12 this made me so hungry I had to attempt this only I used some chicken thighs up instead of pork. Delicious! Will be making this with many meats moving forward.

Some of the prep work. Chili seeding was not as bad as I thought it would be.

Little of the finished product with a sprinkle of queso fresco and cilantro

Fully plated with a keto cheese enchilada and a chile lime jicama radish salad. Enchilada is a melted cheese shell stuffed with cheese and green chile.
