Had a bit of a problem maintaining temps in my UDS on my first trial, because it was 20 degrees F. and windy, so I made a mod. to help on my next meal.

On Saturday, with temps about the same, not as much wind, I decided to make some modifications.

R12 blanket insulation, and some foil bubble wrap, she performed like a champ!!

Even had to cut back on temps.

I think this baby could even work great at the North Pole.

10 lb. turkey, and a 10 lb. pork butt, turkey done to perfection in about 4 hours, butt foiled in 6 hours, left in for a couple more, and fed 25 hungry, happy people.

Made turkey and egg noodle soup tonite to finish it off. (Delish)!!Before and after pics to follow.

Gotta do what ya gotta do. I have ran my UDS in -20F temps, last weekend we had sustained winds in the 40-50mph range. It always just runs like a dream. The only difference is mine sits directly on the ground.

The turkey looks so good!
 
Must not have had enough charcoal in my first cook.

How high is your basket, and approx. how many lbs. charcoal???

Like I said, had trouble keeping her above 200" first time
