Using Bearcarver's fantastic step by step, I made some dried beef and Canadian bacon. Cured both 12 days. Smoked over apple at 120-180 stepping up.

Thanks for the fantastic steps Bearcarver! CB was perfect on fry test. DB needed a short soak. A fun and tasty smoking season!
 
Looks great. Nice work. Those step by steps are a great reference . Use them all the time .
 
Looks wonderful! I've made them also, they are very good. Another good thing is bear's pork loin jerky!
