Got some top round at 3.49 lb 2.89lbs

Used my Cajun recipe with Woshi and Soy

Total weight was 3.2lbs so added 3 gram cure 1

I did some yesterday. Just can't seem to get spicy. Liquid good and spicy but not after drying. Going to half to kick it even more!

besides cayenne, a dried green chile, jalapeno powder for example goes real well with cajun spices. not surprisingly, as good/important as bell peppers are in their cookin
