So I wanted to fill the WSM a little more as I decided to smoke a chuckie, enter the pork butt. Around seven pounds after fat removal half seasoned with Bad Byrons butt rub the other a blend of salt,garlic,cumin,chili powder,white pepper,and oregano. Planning on chopping and not pulling may wrap the Mexican style or pan with some fresh lime juice, BBQ to go unwrapped.

I hate these grueling overnite smokes! Not wrapping either now the smaller half which I believe is the Mexican inspired is really close and had a tasty sample fall off somehow.:biggrin:

 
Thanks guys,just pulled the Mexican seasoned half. Will be chopped up a little later.

I agree with Richie, the mex sounds really tasty ! The regular one isn't too shabby either though... LOL. Nice cook man ! Thumbs Up

It was at 196 IT at one point and then I started losing heat and opened all the vents,not checking the coals, it got going again and started to drop while I was watching tv I pulled it and added more charcoal to finish the other half. So the long answer is no clue on the final IT,hope that helps.:devil:

Thanks WHB, my sampling and the dogs findings were in agreement not to shabby.
 
It was at 196 IT at one point and then I started losing heat and opened all the vents,not checking the coals, it got going again and started to drop while I was watching tv I pulled it and added more charcoal to finish the other half. So the long answer is no clue on the final IT,hope that helps.
