Buffalo Wild Wings sauces on Baby Back Ribs - and other things

Alrighty folks - after a couple of setbacks including our local butcher not having any baby back ribs and the fancy place in Columbus only having two racks instead of three, we ventured out to T&J Market to pick up our three racks.

Total cost of the ribs was about $45 for the three racks (about $15/rack).

We also have Buffalo Wild Wings Honey BBQ sauce, Caribbean Jerk sauce, Desert Heat rub and Chipotle BBQ rub. We also bought a mesquite rub at T&J for the third rack.

The plan, currently, is to pair the Chipotle BBQ rub with the Caribbean Jerk sauce, pair the Desert Heat rub with the Honey BBQ sauce, and pair the Mesquite rub with the rest of the Honey BBQ sauce (or we'll go buy another sauce if we don't have enough).

We're going to cook them on our 22" Weber Kettle. I'm going to utilize the following video as our method for production - the main difference being we will use olive oil instead of hot sauce to help the rubs stick to the ribs.



We will also be using a Weber Rib Rack to cook all three at the same time and will be utilizing Cherry for the smoke this time around. We also have some Apple but dunno how those might combine.

I'll be back with a picture of everything and will be taking pics of the process so you folks can see how it goes!

Well, the ribs look pretty good to us! However, initial concern is that 3 racks is too many for our 22" Weber.

I had to bend up the sides of the pan to get it all to fit on the grill. As you can see, it's a little packed in there.

Smoking away nicely - will check on it in about an hour.
 
Looks like you have a good game plan, ready, set, go!

You may or may not need to rotate those racks around for even cooking.

Just my opinion, but that's too much smoke, half that would be a lot, a third would be better and a quarter even better.
Just saying.

Well, there weren't many large chunks like in the vid, so I grabbed about 6 smaller chunks to put in to try and even it out.
 
Going to rotate them after this next hour is done. Move the front one back and back one front.
 
It sure looks like you have it going brother!
And once again I want to thank you for turning me on the the hot wing sauced ribs.
They were awesome and I guess they have been around for a while but I never heard of them.
I hope yours turn out as good or better than mine did!

This is after taking the one in front and moving it to the back as it looks like it's a bit more cooked. Also had to refill the water pan as it was dry.

On to the next hour!
 
Put some more coals on it as it felt a bit cool and are giving it another hour.

Tried the "bend test" with the tongs and they're not quite ready to start breaking yet, hence another hour.

Brother is currently making our side-dish - this black bean and bacon dish we saw on Binging with Babish.

Ok! Ribs are done and eaten! Gotta say, to my inexperienced eye and taste buds, these were darn good! I think I put them on the grill after basting them too long as most of the sauce was gone. However, I could still taste it.

In order of best taste:

1. Desert heat rub with Honey BBQ sauce
2. Chipotle BBQ rub with Caribbean Jerk sauce
3. Mesquite rub with Honey BBQ sauce

They all tasted quite good but man, that desert heat was SPICY! Left a very nice warm tingle in your mouth and wow, the bark it created near the ends was potent! Sauces all tasted good - Jerk sauce was by far the easiest to discern and I think coupled very well. The mesquite with Honey BBQ was also very tasty but tasted more like a traditional rib than the experimentation we were going for.

In this pic the ribs are desert heat on the left, jerk in the middle and honey bbq on the right. Very nice smoke ring and meat was great - my brother actually got it to pull clean off the bone. Mmmm!

Mighty tasty looking ribs. Can't go wrong with a kettle.
