Did 2 briskets this weekend. First 2 on my new smoker. 2nd time ive done brisket in my life so I figured now is the time to try a homemade injection. Got the idea from
Henry Soo. It has some MSG, Amesphos, beef bullion that had my disodium guanylate disodium inosinate additions. I’ve haven’t made enough briskets to tell weather or not the injection made a major difference or not but it was delicious. My rub recipe was

brisket rub with addition of onion powder and msg. Threw together some basic baked beans and Mac and cheese with it. Everyone loved it this was a practice for my little guys 1st birthday party where I will be doing 4-5 brisket and quite a bit more Mac and cheese. If anyone has any suggestion of making a really creamy Mac and cheese I’m open to suggestions as they kind of dried out alittle on top but I also didn’t cover them which probably didn’t help.
