Did 2 briskets this weekend. First 2 on my new smoker. 2nd time ive done brisket in my life so I figured now is the time to try a homemade injection. Got the idea from
Henry Soo. It has some MSG, Amesphos, beef bullion that had my disodium guanylate disodium inosinate additions. I’ve haven’t made enough briskets to tell weather or not the injection made a major difference or not but it was delicious. My rub recipe was chitownsmoker99 chitownsmoker99 brisket rub with addition of onion powder and msg. Threw together some basic baked beans and Mac and cheese with it. Everyone loved it this was a practice for my little guys 1st birthday party where I will be doing 4-5 brisket and quite a bit more Mac and cheese. If anyone has any suggestion of making a really creamy Mac and cheese I’m open to suggestions as they kind of dried out alittle on top but I also didn’t cover them which probably didn’t help.

Wow, that brisket looks too good! I'm interested in your injection recipe also; are you willing to share?
10 oz of Campbell beef broth

2 tablespoons of ampheos

1/2 tsp of Msg

2 packets of the herbox beef bullion ….I mainly used this because I needed disodium guanylate disodium inosinate as I didn’t have it in raw form.

Side note- I went to LSU at the same time Shaq was there. Had a couple classes with him. Funny guy. I would not say ke knows who I am, but would definitely recognize me. One genuinely generous and thankful individual. Use to always see him on campus carrying a basketball; palming it and doing exercises...always working on his game.
