This wasn't the best brisket I've had in my life but it's the best one I ever made

I got about a 15 point brisket from Hy-Vee. Made a rub that is about 1:1:2+ Lawry's/kosher salt/pepper. Smoked on my new Camp Chef Woodwind Pro pellet grill, I used TSC pellets in the hopper and the smoke tube, and chunks of pecan in the firebox. Smoked until 195° F in the flat, wrapped in foil with tallow and into the 170° F oven until the next noon. Like I said, not the best I've ever had (that goes to Smokey D's or CR Midnight BBQ Smokers) but definitely the best one I'VE ever made!

Pics or it never happened! lol

We love pics of smoked meat

Sounds awesome! I was coming here looking for pics. so I could feature your post on the carousel...we always give lots of love to brisket posts, and if this is the best one you have ever made, it is worthy.

Sounds similar to the process some of the big BBQ joints use

Brisket is very rewarding. When you find your "personal best", you have hit a milestone. Frankly, the addition of tallow, along with the long holding times are things I never would have imagined 40 years ago. But they make a BIG difference.
