I was in Atlanta for over a week, and all I could think about was smoking a brisket. So I had to get one on this morning!


She's in the smoke bath now and I've decided that for this one, I'm not gonna mop or peek until it gets to 180 internal. May not mop then, just peek.

More later for sure!

My neighbor came over to see what I was smoking. He said he was taking a nap and could smell the smoke in his backyard. He just opened his windows to enjoy it more! :yahoo:

Thanks all!  

Last night I packaged it all up in vac packs and reheated 4 slices in the bag for supper.  It was great!

I also chopped all of the point while cold and vac packed it as well.

I've found that packing this stuff after it's been refrigerated really helps keep from losing a lot of juice in the vac process.
