Started a small brisket at 5am this morning. My son is having a get together this evening and asked me to cook a brisket he had. He had a small brisket from butchering a steer. The butcher didn't leave a leave much of a fat cap, so put a little bacon top. LOL bacon makes everything better. I used my own beef rub blend on it.

Picture is 3.5 hours into the cook.

Interesting idea with the bacon! That may be a first for me.

Just off the GMG ready for the rest. Cooked it for my son, he reported that it was very juicy, tender and delish.
