Hey all,

I just picked up a 10lb brisket flat from the local butcher shop. I'm going to put rub on it tomorrow and let it sit for 24 hours in the fridge before smoking on Friday. The issue I have is that it will not fit whole in my 30" masterbuilt. Any advice on how to proceed?

Just cut it in half.

You will get more bark and it will cook quicker.

Cut off the end so that it fits. or if it is just barely to big, prop up the brisket in the middle and let the ends droop down
