I purchased a ten pound brisket and cut it in half to place on the racks along with a 3 pounder. What is the estimated cook time for the 13 pounds
Based on that I would estimate 1.5hrs per lb at 225-250 degrees. So about 8 hours. Now I would start about 10 hours early then it should be done 2 hrs early then you can wrap and hold in a cooler until needed. This also allows you 2 hours of fudge time in case you have temp issues in the smoker.Thank you for the reply and the heaviest piece is 5.25 pounds.
