grilled to medium rare with Lanse's SPF 53 rub. Really likin that rub - has good heat. bacon, blue cheese, blue cheese mustard, red onion. Hand cut, oil fried fries, and a local Amber - EVO.

That looks great! After I ground my first brisket for burger I'm not going back. Brisket maks the best burgers!
 
Growing up in Saskatchewan, ground into burger was the fate of all briskets--some fantastic flavor!!
Yours is cooked just as I like them and your extras sound great. I love blue cheese on a burger, but I've never seen blue cheese mustard--do you make your own or is it store bought??
