I am with Tom, large cuts take a looooong time. I have had my fair share of hungry, sleep deprivced nights. One time did 2 butts and total time was 25.5hrs. Did a few chucks around 3-4lbs and they took 8-10hrs. Live, learn, and laugh.

I suppose a good place to ask. At what point does a brisket get actually overcooked? Is there a decent window before this happens?
