So I purchased a whole Top Sirloin yesterday and broke it down to its 3 muscles..

Top muscle of the sirloin
the sirloin
and the mouse muscle

about 1.8lbs of fat and silver skin
 
Main top sirloin slow cook 230F uds temp until internal of 128F pull wrap and into cooler

Mouse muscle - fijitas

and picanha
 
That looks like alot of meat zippy
