When you go get Breakfast here in East Texas here is what you get.

Barbacoa, Cilantro, Onions, Jalapenos, Guacamole, Red and Green sauce and Tortillas

Now This is a proper Breakfast !!!

Traditionally, barbacoa is a preparation of meat (usually sheep, goat, or beef) that is steam cooked in an underground oven until very tender and succulent. Today the term is also sometimes used for a similar preparation made on a stovetop or in a slow cooker.

I could eat that for breakfast! Yum! Sometimes we will do eggs with chorizo scrambled. With the same toppings. Wish i had a place i could get breakfast like that arounf here!

I'm glad it's OK to use a stovetop or slow cooker, because I'd hate to have to get the shovel out to dig up that underground oven all the time!!:emoji_sunglasses:

I’m good with that for breakfast lunch and dinner! How did you do your barbacoa? I’ve only had it at Chipotle but love that.

Looks really good. Was this made at home or from a restaraunt? I'm in E. TX and might have to give a try sometime.
 
#1 son picked it up the street a local place, Their stuff is really good
I'm in Whitehouse, just 8 miles South of the loop in Tyler.

Pretty much like everywhere else we have a lot of Mexican Restaurants (Tex-Mex) but we do have several great Taqueria's and a few Real deal Mexican Restaurants

Those pics and your description of that breakfast made me miss Texas mornings so much. I think my wife might start crying when she sees it. Nothing out here in Cali comes remotely close to the flavors of breakfasts in Texas.
 
My #1 son was doing a job in NJ (Tower Crane Operator) he was up there for over a year.
The first thing he did when he got back to Texas was eat at Whataburger and get some real Mexican food,

Ah...now your a serving. Done the under ground cook a few times. Can beat it for how things turn out but prep is a bitch...just saying.

I live just up the road from you (between Longview & Tyler). Had dinner a couple nights ago in your neighborhood (Chuy's Tyler). Its a small world isn't it?
