One time 8 hours, the next, 12!

That's why I always say give yourself a 4 hour buffer. They hold well in a cooler wrapped in towels when they finish early, and the present well when done "right on time"!
 
If you're in a pinch, crank up the heat or finish it in the oven.  Butts can be stubborn!  Best of luck!
