Every summer a buddy of mine arranges a booze cruise on the boat Sea Mist to do a two hour tour of the Thimble Islands in Long Island Sound off of Branford, CT. Food isn't the showpiece of this swaray (yes I know that's a bastardized spelling) but there's usually some munchies so I decided to cook up some scarbelly wings. https://www.smokingmeatforums.com/threads/scarbelly-wings-and-thanks-to-everyone.275943/

I used 2:1:1 Creole butter, Frank's Wing sauce and habarero sauce for the injection, poured the remainder on top then set in the fridge about 1.5hrs. Pulled them out and dusted with Tony Chachers. Fired the smoker to 300°F and cooked the wings about 45min, flipping to attempt a good skin on both sides. Came out very tasty, skin was good but could be a bit crispier. I'm working on the heat level, this was my 2nd attempt and still fairly mild but yummy, everyone that had one was very complimentary.

Btw, the Thimble Islands are really just big rocks sticking out of the Sound that rich people build houses on that they use 2 months a year. Some crazy rich people even "collect islands". There are 1 or 2 bigger island that regular type peeps have nice little summer cottages on.

Thanks All! Yup, wings were tasty and it was a fun trip, always a good group of people, I think about 30 of us, been doing it for 6 years. The last 2 pics were actually last year, you can see in the first island pic it was a bit dim and a bit cloudy this year, not so great for pics - it was actually full dark when we got back to the dock! Pretty calm ride, but even if it's rough (ok, rough for the Sound ;) my definition of rough would leave most people in the fetal position begging for it to please end ) the captain can keep the boat inside the inner islands for a smooth ride. They don't want the non-boat folks puking all over after all!
 
Your wings look good! That’s crazy how close they build them homes to the water. Wonder how much flood insurance is?
Thanks! I agree, the owners must have had some serious pucker factor going on when Hurricane Irene and Sandy came through a couple years ago. One of my buddies on the boat had a friend that did some construction on one of the islands, $500K to put in a pool - all steel work and concrete cuz you can't actually put the pool into the rock.

Haha! Well, the thing is, wings are small and the marinade injection needles are pretty big so most of the injection just fills inside the skin a bit then starts leaking so there isn't that much in there. I may have to try an actual hypodermic needle to get it more into the meat. I'll play with the ratio more next time keeping some the same and jazzing up the others while attempting to improve the injection technique. Man I just hate having to eat these experiments! ;)
