Seriously, Dude, that cooker is a thing of beauty! Very nicely done on the steaks and taters! I'd founder myself on that plate!

I am so glad to see that you got the beast up and running. I knew every picture well since I have a similar cooker.

Next up for you should be skirt steak or flap steak. These two really make you love how well you can make meat taste.

One thing to make it even better is after the charcoal is going is to add wood splits on top. Believe me once you do that you will never go back to charcoal alone.

Thanks Sandy, and the X-Fire got lots of use before we moved to a place I could roll it out to use so had some time with it to "practice"
Great pics! Glad to see you cooking on that beast again! I know it must be satisfying after all the work to build the cover for it. And it seems I missed how this grill functions until just now. Cool concept on the grate.

I still need to fab up the stainless round rods, and the smoking drip pans, (have the materials in the garage) and plan to do that in the next 2 months as I am welding up some matching metal posts for our covered porch. We are adding matching privacy and wind slats as well.

As an FYI, the V grates reduce flare up and create a mild smoke flavor vs a "hard char". The round rods will create the "hard char" flavor....ie each will have a flavor profile purpose....

And much appreciated! Since my son and me built it together as his civil learning project in High School it has meaning with it and that translates to the food!

Bill you have NO idea....LOL no ring....yet.... but I do have ringed hooks to hold things above the flames, does that count? Its a lot of fun to cook on it! The inside of the chamber was 400 degrees before I put the steaks on. A fire that that creates some serous heat!

Thaks Chris, and if you remember in the way back memory, you provided some measurements for the v-grate as I was planning the build, so your cooker has a "connection" Thanks again.

The coals are just a bed to help with the base heat and make the splits burn clean and hot. I ran the coper pot this way and have always use splits for flavor in the X-Fire. I have been drying an apricot tree for about 4 years now that will be consumed as splits after my cherry is gone....
