From a Safety aspect. At 70°F (21°C)+/-, you can Safely Smoke, un-cured meat, for up to 2 hours. At 40°F(4°C), you can Smoke till the Cows come Home, then throw one of Them in the Pit!😁...JJ
 
Happy Birthday, disco! That a "birthday" plate and looks beautiful. This is exactly what I cook for my Birthday every year for last 10 years - STEAK! The only difference is I cook a porterhouse steak which is huge and is enough to last for two more dinners for me!! :emoji_laughing: :emoji_laughing: :emoji_laughing:

I am thinking maybe cold smoke, reverse sear until temp then sear, what do ya reckon Disco?

Looks great Disco! Excellent idea to cold smoke first. I'm definitely trying this on my MES 40 this week. Would love additional flavor. What wood flavor did you use? I'll probably use hickory the first time. Happy Birthday! We still celebrate Birthdays, but we stopped doing the math, lol.

I used hickory. I only appreciate birthdays as a reason to pay for quality beef!

Thanks, Chef! I appreciate the safety info. I didn't go for less for safety reasons. The Bradley pucks give a lot of smoke flavour and I didn't want to overdo it. I will try an hour next time and work my way up.

Har! I used to buy a big old slab of ribeye but it is just too much for me now. The only thing worse than getting old is the alternative.
