The Big Bald BBQ rub is from Jeff’s book. I’m not sure if it is the same as the one he sells, I havent bought it yet but have sure thought about it......as an FYI I do use a slightly modified version...I 1/2 the amount of black pepper cause my wife is sensitive to it.

We really like the copper pot, the pellet smoker doesn’t get used much since I finished the build.

Ok phase 3 - lunch & dinner, cubed up a slab.

Into a pan they go for a hot sear, once ideally seared the additional rendered fat is removed.

Next a cup of Big Bald BBQ based sauce is added to make meat candy.

Now it is plated on a toasted sliced roll and finger sides to refresh the taste buds!

There needs to be a limit to what this belly is doing.....the goodness needs to stop!!

I got stuck at work and went to dinner with a client.....had to eat prime rib at longhorn....

The wife got all the fixens today, so on the morrow, I promise!....patience is a good thing some times.....

Y'all getting any of this nasty weather in Idaho? We got slammed up here. Declared a "snow emergency" in Hamilton (I didn't even know those existed).

At any rate, if y'all got weather like we did in Western Montana, I'll take the prime rib at longhorn.

Snow emergency....haven’t seen one of those since two years ago here....we called it a snowmegedon.....the Gov declared a state of emergency. Store roofs and other businesses were collapsing, it was crazy! Sad to say it was 45 deg here today, so no excuses for the porkless night
