Hey all !

Haven't posted for awhile.

Want to do something I have not done for years.

Live on VERY tight budget here.

My favorite beef cut is Beef Back Ribs.

Used to buy them for even $1/lb years ago... moved very rural... Local grocery store that cuts its meat wants $5.39/lb for in house fresh cut but still w all shiners.

Even though they cut in house and often on sale have bone in rib steaks for $4.99 or $5.99, and regular price for BONELESS rib steak at $8.99,...he will not sell the in house cut ribs less than $5.39.

I want to order a couple frozen cases of NAMP/IMPS #124 Beef Back Ribs.

Yes, I know they are shiners, I do NOT want Plate ribs, they taste different.

My Grocery meat guy talked about above still wants $5.00/ lb for those in a ordered frozen out of house case qty.

Any suggestions how/ from who to do this ECONOMICALLY ?

All my local (Only a few choices here being VERY rural in E TX)either grocery meat dept or Butcher shops tells me like $5/ lb.

WAHAT??

Correct me if I am wrong.. I am pretty sure the cost from their source is definately clearly under $2/ lb.

I DO understand markup being self employed many years, so lets please not talk about markups to be in business.

Can anyone out there give me a ballpark price/lb of what Butchers and Grocery stores pay to order a case of IMPS #124 Beef Back Ribs in Feb of 2019 ?

Thank you, Marc

I have no Costcos, Sams, RD, or ANYTHING for 150 miles.

I have to order them from a grocery, butcher, or ??? (you tell me, I don't know the channels of distribution for beef)

Can a restaurant buying from like SYSCO or Ben E Keith or whatever have access to order this.. and at approx what price to them ?

Who all told are my possible providers ?

Who has access to order this stuff that I can sweet talk ?

Please remember - VERY tight budget here.. want to pay NO more than $3/ lb MAX MAX in frozen 1 or 2 case quantity.

Can't that be done?

Marc

Some Restaurant supply places like and including Sysco, allow Walk-in Customers to pay cash at wholesale prices. Some give big discounts on partial cases as after selling what an area restaurant ordered by the pound, they got to move the rest. Some will even allow you to pay up front, online, then they will put your order with the closest Client Restaurants order, for you to pick up. Along the same line. Get friendly with a local restaurants owner or chef, whomever handles purchasing. Ask if you could Pay them to add a case or two of what you want to to their order.
Price wise, can't help you. Been out of the business too long. Most Grocery stores will order a case of something their warehouse carries but they are going to mark it up some or charge the retail price...JJ

You might want to look into #130, chuck short ribs, they might be a bit cheaper.

Thank you, but I specifically want Back ribs, either #124 packinghouse cut or a hand cut variation hopefully w a little more meat..and vertebrae.

I sense a flavor diff, and MUCH prefer the back ribs.

Have had beautifully marbled plate ribs few times, did not care for the flavor as much.

Preacher - From what kind of source ? Grocery store, Butcher, somekinda "wholesaler" ?

Is that a regular price you can get anytime or some one time oddball special ?

Thanks Marc

I know when we bone out our ribeyes at work we sell the ribs for 3.99, i'm off now until Friday but I can look in our ordering book and see if our warehouse sells frozen ribs by the box and how much they are if that will help you any.

Smokerjim - That would be AWESOME !!

Ya, should be called #124... I think usually 2 - 7 bone racks cryo'd together... and about 4-5 double rack packs/ case.

I think bones will be like 8" long, unfortunately no vertabrea.

I know they are very well cleaned off w V cuts between bones.

Unfortunate, but how it is if from a packing plant.

You in house cuts may be meatier.

Thank you.. I am VERY interested in hearing back from you.

The price a store or butcher would pay to a wholesaler is my MAIN question.

marctrees our cost for what they call beef spareribs is $1.89lb., these are probably close to what you call 124's, they are sold in 65lb. boxes
