A new butcher just opened by my town. It’s called Wild Fork and it’s nice market. Picked up a couple packs of Berkshire pork steaks amazing. I marinated them in garlic, rosemary, thyme and olive oil. Then I put some rub let them sit for a bit and seared them up. I cooked them to about 140 and they were amazing. Forgot to take the plate pick was starving lol.

Looks great! I love the rich red Berkshire pork. I was just on their site contemplating an order. I’m probably going to order some spares and shoulder.
 
Those Berkshire steaks look great!
Butt Steaks was all we ate as Pork Chops. Dad didn't like Loin Chops, to dry. This was the 60's and everyone believed Pork had to be cooked to death! Mom made the Butt Steaks simply. Just SPOG fried till no pink, in a bit of EVOO, and always served topped with a pile of Caramelized Onions, Mashed Potatoes on the side and some green veg, usually Peas. I made this meal for my Wife many years ago and this meal has become a favorite of her's as well. The kids too...JJ

I cooked them to a medium rare to medium just had a light pink inside juicy and tender.

Nice looking pork, Binnesman.

I have 4 of those in my freezer, waiting for an opening on grill. Hopefully soon.
