I'm new here and to meat smoking. My wife bought me a Little Chief for Christmas 2013 and I've been experimenting. I'm looking forward to reading in the forum and, in all likelihood, asking for advice often.
I do have an immediate question: I'd like to hear from anyone who has smoked fish (or anything else really) over Madrone a.k.a. Arbutus. How did it turn out? Any advice on chipping it small enough for my kind of smoker?
