Has anyone on here ever make pasrami from beef tongue? Around here the tongue is dirt cheap thought why not make some pasrami. I know u need to brine like any other cut of meat but what about the skin on it? Will the smoke penatrate the skin and I also know the best way to skin it is cook it first. Any help would be appreciated.
 
Good luck with that tongue!  I think I'll stick with the other parts...ribs, roasts, briskets, etc.

I have never smoked it.

Dealing with the skin is a chore unless boiled.

The meat is excellent.  Please ignore any posts with the "Eewwww" factor.

Tongue is like any other Beef Muscle...Cooked right it taste like Beef, just more so in this case. Since Tongue and Heart are the most active muscles they contain dense muscle groups with plenty of collagen to hold it all together, lots of rich flavor. Tails are another good choice to smoke then Braise...JJ
