After tasting and eating ribs all last week.......I wanted something different for dinner today. So I rummaged through my freezer and found some Beef Tenderloins pieces I was going to make Beef Kebabs with them a couple of weeks ago but, never got around to making my kebabs ;o( So today, I made one of my Jerry's favorite dinners....Beef Tenderloin & Veggie Wraps and they were really good...I made more than I could eat for dinner today. I will have the leftovers for breakfast in the morning with eggs and a glass of orange juice!
For the Marinade
1/2 cup low sodium soy sauce
1/2 cup brown sugar
3 cloves garlic, minced. I used roasted garlic because that's what I had in my fridge - you can use fresh garlic if you prefer
1 teaspoon sesame oil
1 tablespoon freshly grated ginger
1 teaspoon garlic chili sauce
I added all the ingredients in a glass measuring bowl and whisked together until well combined. Set aside.
Preparing the beef
I started off with about 1 1/2 lb. beef tenderloin pieces. You can make this recipe with sirloin or top round steak if you prefer.
I placed the beef tenderloin in a plastic bag and pounded it out super thin - about a 1/4 " thick
After I pounded out all of my beef tenderloin pieces, I wrapped with plastic wrap and placed in the fridge while I prepared my veggies
The Veggies
1 zucchini, sliced thin and cut small
1 yellow squash, sliced thin and cut small
1 large carrot, sliced thin and cut small
2 green onions, sliced thin and cut small
**NOTE - you can use any kind of veggies you like. The veggies I used was what I had in my fridge!
I sliced up my veggies super thin and cut each piece small according to the size of my tenderloins. I lined up all the veggies and cut again to make sure they were all the same length.
After I trimmed all my veggies, I put the trimmings (and leftover veggies) in a small sauce pan. I added a little olive oil, pinch of Aleppo Pepper flakes and a pinch of kosher salt - will sauté and serve as a savory bed of veggies.
Preparing the Beef Tenderloin Wraps
I removed my tenderloins from the fridge. I brushed 6 pieces with the marinade on ONE side
I had 5 more Beef Tenderloin Wraps leftover - I will have those for dinner tomorrow. I DID NOT brush them with the marinade. I will do that tomorrow before I grill them.....don't want to over marinade my beef tenderloin.
I added my veggies on top like this
Then I rolled up tightly and secured my tenderloin wraps with a toothpick. I continued until I wrapped all of my Beef Tenderloin & Veggies Wraps
I brushed another layer of the marinade all over (6) tenderloin wraps - now they are ready for the grill
I placed my beef tenderloin wraps in a preheated grill - over medium high heat. I grilled on one side for about 2 minutes. After 2 minutes, I rolled on the other side and cook for 1-2 minutes. That little piece in the front (with no veggies) is for my Sophie (the beagle)...she is such a pampered pooch!
If you like yours rare or medium rare - just cook for less time.
